Crispy Noodle Rice
1 cup Rice (boiled)
1 cup Noodles (boiled & deep-fried)
2 tbsps Oil
2-3 cloves Garlic (crushed)
6-8 French beans (finely chopped)
2 medium sized Carrots (grated)
1/2 cup Green peas (boiled)
1 tsp Red chilli paste
1 medium sized Capsicum (deseeded & finely chopped)
Salt to taste
1 tbsp Vinegar
3 stalks Spring onion greens (sliced)
Method
Heat oil in a wok. Add crushed garlic and saut. When it changes colour, add French beans, carrots and saut for a minute. Add boiled peas, red chilli paste, capsicum and salt. Toss and mix Add boiled rice and mix using two spoons. Crush crisply fried noodles and add. Add vinegar, spring onion greens and mix. Serve immediately.
